This wine is crafted from 80-year-old, dry-farmed Cinsault grapes grown in the Florida vineyards of Itata. The age of the vines and the dry farming methods contribute to the distinct character and intensity of the grapes.
The Cinsault grapes are sourced from the Florida vineyards in Itata, known for their 80-year-old, dry-farmed vines. These old vines produce grapes with concentrated flavours and unique characteristics.
After hand-picking, the grapes are destemmed and placed into open-top wooden tanks. A slow alcoholic fermentation occurs over 20 days with gentle pump overs to avoid excessive extraction. Following malolactic fermentation, the wine is aged for 15 months in a combination of stainless steel and old oak barrels, which enhances its complexity without overpowering the delicate fruit flavors.
