A well crafted Cabernet Sauvignon from Chile's largest organic wine producer.
The aroma includes bright fruity damsons, plum and spices, balanced with the sweet and toasted notes of wood. The palate is soft with gently appealing blackcurrant, well structured tannins, leaving a persistent flavour including hints of cherry stones.
Emiliana is one of the world's most important producers of organic and biodynamic wines and the largest in South America. They have a total of 997 hectares under vine in the valleys of Casablanca, Maipo, Colchagua, and Cachapoal of which 923ha are IMO certified organic and the remaining 77 in conversion. Their spectacular biodynamic vineyard and winery at Los Robles is a model that attracts visiting viticulturalists and winemakers from all over the world.
The grape was manually harvested at the end of April. After it was processed, there was a cold prefermentative period, at 8°C, for 5 to 7 days. Alcoholic fermentation remained with temperatures between 25°C to 28°C. After a post fermentative maceration, malolactic fermentation takes place naturally, with daily temperature controls. Part of this wine ages for 6 months in oak barrels.
This wine is ideal for cheeses, strong red meats and spiced dishes.
