This Verdejo offers enticing aromas of citrus and white peach, complemented by fennel and lightly toasted notes. The palate is complex, featuring stone fruit and bright acidity balanced by savoury, nutty characters that add texture and weight to the wine.
The Verdejo grapes for this wine are sourced from the Los Curas vineyard, located just 5 kilometres from the winery. The focus is on preserving the grapes' freshness and aromas by harvesting at night and using a meticulous production process.
The Verdejo grapes are harvested during the cool of the night to retain their freshness and aromatic qualities. The Los Curas vineyard's proximity to the winery ensures the grapes are transported quickly, preserving their quality.
Upon arrival at the cellar, the grapes are chilled further and undergo a 12-hour maceration. Fermentation is divided, with part of the must fermented in stainless steel tanks on fine lees and part in French oak barrels. After six months, the wine is blended, consisting of 80% stainless steel-fermented wine and 20% oak-aged wine. This method combines freshness with complexity and texture.
