Cavit is a leading co-operative in the mountainous Trentino region of northeast Italy. The winery began as a consortium of associated grape growers in 1950, with a dedicated winery at Ravina di Trento built in 1964. Today it unites 11 separate cellars and their combined 5,250 grape growers across 6,350 hectares of vineyard, to produce an impressively broad portfolio from an intriguing palette of indigenous and international grape varieties. Trentino has a much higher proportion of wines produced as DOC than any other region in Italy - an average of 80% of the region's wines have a DOC classification, compared to around 30% elsewhere in the country. Remarkably, Cavit accounts for 60% of this region's wine production and they advise and supervise all aspects of this production from the vineyard to the bottle.
Grapes are sourced from hillside vineyards in Oltrepo Pavese, Pavia, at 200-400m altitude. The climate has hot summers and cold winters, with an average of 600-900mm per year - particularly in late autumn and early spring.
Harvesting time is established by means of tests which measure the degree of ripeness of the bunches. After an accurate selection carried out in the vineyard, the grapes are destalked, crushed and the must including the skins is immediately cooled to around + 8 °C. Before pressing, 4-5 hours' cold (+ 8 °C) maceration is carried out in total absence of air in order to encourage extraction of the aromas from the skins. It is precisely during this stage of the winemaking process that the copper colour, which is a feature of this Pinot Grigio of ours, is extracted, though to a limited extent. Once maceration has been completed, the crushed grape mass is softly pressed using bladder presses and the must fermented in stainless steel at a temperature of around 18°C. There follows a short period of refinement in stainless steel before bottling, in order to enhance the wine's crispness and fruitiness.
Excellent on its own as an aperitif, but also suited to salads, fish and grilled chicken.
