Cavit is a leading co-operative in the mountainous Trentino region of northeast Italy. The Pinot Grigio grapes are sourced from the Valle dei Laghi, a sub-Mediterranean valley known for its well-drained, medium-fertile soils. The growing conditions help maintain quality and balance in the fruit.
The grapes undergo a soft pressing to avoid extracting color from the skins. Fermentation occurs in stainless steel at a controlled temperature of 20°C using selected yeasts. After fermentation, the wine is matured for four months in stainless steel vats to preserve freshness and enhance texture before bottling.
