This Albariño is produced from grapes grown on pergola-trained vines in the Salnés Valley, an area renowned for its sandy soils that contribute to the unique characteristics of the wine. The focus is on careful selection and hand-harvesting to ensure the highest quality fruit.
The Albariño grapes are sourced from vines cultivated in the sandy soils of the Salnés Valley, trained on pergolas to optimize sun exposure and air circulation. The grapes are meticulously selected in the vineyard and hand-harvested into 20kg crates to preserve their integrity.
At the winery, the grapes undergo further sorting before being destemmed and pressed. Fermentation occurs over approximately 15 days at a controlled temperature of 16-18ºC using wild yeasts. Partial malolactic fermentation is also carried out with naturally occurring yeasts, adding complexity to the wine.
