The Ribolla Gialla grapes are carefully cultivated to take full advantage of their high acidity and stone fruit qualities, which are ideal for creating sparkling wines.
Fermentation occurs in stainless steel tanks to preserve the fresh and vibrant character of the Ribolla Gialla grapes. A second fermentation takes place in the tank, followed by 2-3 months of aging on the lees, which adds depth and complexity to the wine.
