An epic, delightful blend from the ever inventive Donovan Rall, Vuurberg White 2011 is actually quite dumb initially but rewards a night open in the fridge to really show off. It is positively packed with rich, bright, fresh stone fruit and minerality and keeps on giving with a core of stoney acidity and a relentless finish.

Next door to Zorgvliet on the Helshoogte Pass that winds round the eastern face of the Simonsberg Mountain between Stellenbosch and Franschoek is a tiny estate by the name of Vuurberg, pronounced FEER-berg. Gloriously compelling wines from a brilliant young winemaker exploring the Cape's old vines. The 2011 white is a blend of Chenin, Viognier, Roussanne, Clairette, Grenache Blanc, Verdelho & Semillon from vineyards on the estate and from Swartland. Only very small quantities are produced but already the wines are getting rave reviews across the Cape and sit on the more interesting, less-predictable wine lists of the best contemporary Cape eateries. Donovan is very much amongst the current crop of young Cape winemakers being closely followed by the UK press.

Sourced from estate vineyards in Stellenbosch with some Swartland fruit grown on decomposed granite, gravel and some clay

In the winery

The grapes are picked as early as possible and rushed to the cellar where depending on the varietal they are either crushed and destemmed or transferred directly into a tiny manually operated basket press to be process whole bunch. The unsettled juice now goes into French barrels (30% new) with nothing but sulphur added at this stage. Fermentation occurs naturally without the addition of any yeasts or nutrients and usually takes between 3 to 9 months to be completed depending on the variety. The wines stays on lees in barrel with regular battonage for 10 months before blending and bottling.
