Food Recommendations

Pale yellow in the glass, this wine has enticing aromas of fleshy stone fruits, lychee and white flowers. The flavours on the palate are gloriously concentrated, and the wine has a silky texture that is balanced by a lifted acidity.

Château de Fontarèche is one of the most historical estates in the Languedoc. It has been in the Mignard family since 1642 and is today owned by Jacques De Lamy. The estate is managed, however, by head winemaker Vincent Dubernet, whose father preceded him as consultant winemaker.

Set out on a former terrace of the Orbieu river, the vines are rooted in gravelly soil with a wealth of pebbles, offering the balance sought-after in a vineyard: soil that creates mild water stress during some stages of grape ripening.

Once at the winery, the grapes were destemmed and gently crushed. Fermentation took place in stainless-steel tanks at controlled temperatures in order to preserve the delicate aromatics of the fruit.
