Food Recommendations

Delicately aromatic with lychee, greengage and citrus fruit. Taut and textural palate with apricot, mango and ripe citrus stone fruit. Concentrated yet restrained, the fruit perfectly balanced by fresh acidity and mineral notes. Gently savoury and long on the finish,

From late ripening Clairette Blanche grapes from 44 year old vines. Grapes are hand picked in the early morning and transported to the winery.

The grapes are whole bunch pressed and settled for 24 hours. Racked to 4th fill French oak barrels and slowly fermented. Thick lees contact for about 6 months with regular ‘bâtonnage’ then racked from thick lees with sulphur added and aged in the same barrels for a further 2-3 months. This wine is crafted with minimal interference allowing the fruit of these once untended, unirrigated old bush vines to express a unique provenance.

Perfect companion to zesty salads, light meat dishes and even seasonal seafood options.
