The grapes for this wine are sourced from the expansive Mâcon-Villages appellation in southern Burgundy, near Pouilly-Fuissé. The vineyards are situated on clay and chalk soils dating from the Jurassic era, which are highly favourable for cultivating Chardonnay. The region's varied terroir allows for the selection of grapes with diverse characteristics, contributing to the wine's complexity and balance.
After harvesting, which may be done by hand or with grape harvesters, the grapes undergo pneumatic pressing. The whites go directly into vats after settling. Alcoholic fermentation and ageing are carried out in vats over 6 to 10 months. Throughout the aging process, decisions are made only after careful tasting evaluations, ensuring the true expression of the terroir and the character of the vintage.
