Two classics, oozing with sophistication and finesse

This week we're back to the classics with a phenomenal Chablis from the highly respected producer Louis Jadot, and an award-winning Cairanne that's going to be the perfect match for this week's colder temperatures.

Louis Jadot Chablis ‘Cellier du Valvan'

A beautiful Chablis from this long-established wine-maker with some of Burgundy's best vineyard sites. 

This very elegant Chablis is bursting with white flowers and stone fruits aromas. Round and subtle on the palate, this wine has a long finish with a stony character and a fresh acidity that leaves you wanting more.

Louis Jadot was established in Beaune by founder Louis-Henry Jadot in 1859. They have carefully striven to establish and maintain the quality of their wines for 160 years through the steady acquisition of the best vineyards in Burgundy. Over a century and a half later, they now produce wines from over 150 appellations - from Beaujolais Villages to Le Montrachet.

The grapes come from different vineyards within the Chablis appellation, planted on limestone soils. The fermentation takes place in stainless steel tanks and then the wine is aged on its fine lees.

This wines pairs fantastically with seafood, particularly with lemony sauces! Try with this beautifully simple Lemon and prawn risotto.

Cairanne La Côte Sauvage

A rich, savoury and meaty mouthfull! 

Intense Morello cherry fruit and a touch of sweet spice on the nose, ripe berry, liquorice and a hint of cinnamon spice on the palate. This Cairanne is full flavoured, rich and smooth with supple tannins. 

The Southern Rhône village of Cairanne lies in the heart of the Southern Rhône valley, north east of Orange. For this La Côte Sauvage, fully ripe Grenache and Syrah grapes are hand picked from old bush vines on selected hillside slopes within Cairanne, northeast of Orange in the heart of the Rhône valley. The vineyards here have the classic argilo-calcaire soil of limestone pebbles over clay, which help to fully ripen the grapes.

To make this Cairanne, winemaker, Eric Monnin, uses traditional vinification techniques - indigenous yeast and a long cuvaison period, followed by maturation for 22 months in mostly old French oak barrels to develop great concentration, complexity and finesse in the wine

James Suckling awarded this wine 91 points, describing it as "a fruity and well-balanced Cairanne with cherries, wild berries, warm herbs and baking spices. Medium body with crunchy berries. Fruity and vivid on the finish with excellent length.
