Spice it up, Viva La Vida!

Vibrant and full of flavour is how we see our Argentinian Malbecs, such as Pablo Y Walter. They are expressive and colourful and never disappoint. They deserve great food to go with them and of course the company of good friends.
This great Argentinian salsa is the perfect way to lift some of your favourite dishes. And it's so easy to make. A handful of ingredients and a little mixing and it's ready.
Chimichurri sauce
- 1 generous bunch of fresh parsley
- 5 cloves garlic
- 250ml olive oil
- 50ml red wine vinegar
- ½ to 1 teaspoon crushed red chilli flakes (according to how hot you like it)
- ½ tablespoon dried oregano
- Squeeze of lime juice
- Freshly ground salt & pepper to taste
Roughly chop the parsley, crush the garlic then mix with all the other ingredients – simple as that.
This will store in a sealed jar in your fridge for 2 – 3 days and the flavours will continue to develop.
Serve on anything from your favourite grilled steak, chicken wings, roast potatoes, grilled mushrooms or blend into salad dressings…. And much more. So versatile.
